Cut the beef first into slices and then into strips. Peel and finely chop the onion. Put everything together with the beetle beans in a bowl and mix. Season well with the vinegar, pumpkin seed oil, salt and pepper and marinate. Peel the hard-boiled eggs and cut them into eighths.
