Cut the pumpkin flesh into finger-thick slices, season with salt and pepper and let rest until the salt is absorbed.
Then coat the pumpkin slices with flour, breadcrumbs and egg.
Heat oil in a non-stick frying pan and fry until golden brown. If necessary, season the fried pumpkin cutlets again with salt and pepper.
Arrange the cutlets and serve.

It goes well with a herb yogurt sauce and crisp lettuce!
