For the Coffee Nut Bites, first preheat the oven to 180 °C. Line two baking sheets with baking paper. Mix the flour, cocoa powder, ground hazelnuts, baking powder and 1 pinch of salt in a bowl until well blended.
Beat the eggs with the sugar, instant coffee and canola oil in a large bowl with the whisks of a hand mixer until foamy. Add the dry ingredients by tablespoonfuls and mix briskly to combine.
Using a teaspoon, scoop out walnut-sized portions of the dough and, using a second teaspoon, space them slightly apart on the baking sheets.
Bake the Coffee Nut Bites in the oven (center) for 12-13 minutes per tray. Remove them from the baking tray with the baking paper and let them cool on a cooling rack. Dust with powdered sugar.
