Sauté onion and garlic in lard until soft. Add apple pieces, juniper berries, sauerkraut and Riesling, simmer for 1 hour.
Add sliced pancetta with kirsch, cook for 45 minutes.
Serve with garlic sausages and cooked, peeled potatoes.
