Remove the rind from the Gorgonzola and cut into pieces. Add the cream cheese and milk and blend with a hand blender. Season well with pepper. Peel and finely dice the onion, chop the parsley and season heartily with salt and pepper. Stir both into the Gorgonzola cream cheese sauce.
