For the Baba Ganoush, preheat the oven to 220 °C top and bottom heat. Prick eggplants several times with a fork and bake for 30-35 minutes, depending on size.
When cool, cut into quarters lengthwise and remove the flesh from the skin. Place the flesh and other ingredients in a tall container and puree with a blender.
Season to taste with salt and lemon juice. If you like, sprinkle a little paprika powder on top before serving.
